Abstract: The greatest potential and need for coconut water utilization exists in desiccated coconut factories due to centralized nut processing. Coconut water is the liquid endosperm found in the fruit of coconut. Some of the constituents (nutrition) of mature coconut water is presented in table 1.
Processed coconut water as a refreshing beverage either carbonated or non-carbonated is the latest product to be developed.
with all These numerous attempts to utilize coconut water in bulk, at present still none appears to have been successfully applied in large scale. In this regard, this study was conducted to determine the feasibility of formulating coconut water into a beverage which will permit large scale utilization.
