军曹鱼背部肌肉营养价值评价

Analysis of nutrition of dorsal muscles in cobia (Rachycentron canadum)

  • 摘要: 采用现行的国家标准测定军曹鱼(Rachycentron canadum)雌雄个体背部肌肉的基本营养成分、氨基酸含量及脂肪酸组成,并与其他海水鱼类进行比较,结果表明:军曹鱼肌肉中花生四烯酸等多种脂肪酸含量位居首位;粗蛋白、特定氨基酸及EPA+DHA含量亦名列前茅;雌鱼水分含量显著高于雄鱼(P<0.05),但粗蛋白质、粗脂肪和灰分无显著差异(P>0.05);氨基酸含量前3位为谷氨酸、天冬氨酸和丙氨酸,且雄鱼氨基酸总量显著高于雌鱼(P<0.05);脂肪酸组成上以饱和脂肪酸最多,其次为单不饱和与多不饱和脂肪酸;除油酸外,雌鱼多种脂肪酸含量显著高于雄鱼(P<0.05)。综上所述,雌雄军曹鱼具有丰富的营养成分,尤其是优异的脂肪酸含量,属于优质海水经济鱼类。研究结果旨在科学评价中国南方海水网箱养殖的重要鱼种—军曹鱼的肌肉营养价值,为优化其人工繁育及深加工技术提供重要基础。

     

    Abstract: In the report, the current national standards were performed to determine the basic nutrients, amino acid content and fatty acid composition of the dorsal muscles of male and female cobia, and which were compared with that of the other marine fishes. The results showed that the content of arachidonic acid and other fatty acids in the muscles of cobia ranked first; the crude protein, specific amino acids and EPA+DHA content in the muscles of cobia also ranked high in the list; the moisture content of female fish was significantly higher than that of male fishes (P<0.05), however, there were no significant differences in crude protein, crude fat and ash (P>0.05); the top three amino acids was glutamic acid, aspartic acid and alanine, respectively, and the total amino acid content of male cobia was significantly higher than that of female cobia (P<0.05); the composition of fatty acids was dominated by saturated fatty acids, followed by monounsaturated and polyunsaturated fatty acids; the content of many fatty acids in female cobia, except for oleic acid, was significantly higher than that in male cobia (P<0.05). In summary, male and female cobia are high-quality marine economic fishes with rich nutritional components, especially excellent fatty acid content. Our findings aimed at evaluating the nutritional value of the muscle of cobia, which is an important species of marine cage culture in southern China, and which provide an important basis for optimizing its artificial breeding and the deep processing technology.
